This Viognier was made in the style of the Portuguese, Método Portuguese. We allowed the grapes to ripen on the vine to the highest possible sugar levels. Once harvested, the fruit was gently pressed and fermented in oak barrels. After a month of fermenting we stopped the fermentation to keep the slightest amount of residual sugar and capture the lush fruit flavors. The wine is bright with aromas of stone fruit and honey. Served chilled or over ice with a splash of soda.

This 100% Carrbonic Cabernet Franc is from Rossi Vineyard in the Happy Canyon AVA. The grapes are hand picked, then placed whole cluster in a French oak barrel that is completely sealed to create a carbon dioxide rich environment. With the lack of oxygen, the whole clusters begin to ferment turning the sugars into alcohol. We then press the wine and it returns to an oak barrel for another 2 months prior to kegging. This type of fermentation gives the Cabernet Franc a lighter color, with fresh fruity aromatics, and low tannins.
