This Cabernet Sauvignon comes from Sky's The Limit Vineyard in the Happy Canyon AVA. Happy Canyon is the warmest AVA in Santa Barbara. The soils are a mix of stone, river rock and clay loam. This creates the ideal environment for Cabernet Sauvignon. The vines are planted 6’ x 3’ creating competition for water and nutrients. These conditions intensify the flavor concentration in the fruit.
This Cabernet Sauvignon was aged 20 months in 20% new French oak barrels.
This Cabernet Sauvignon has lush layers of baked cherry, blackberry and black currant with a hint of licorice on the nose. The wine is well-balanced providing a rich mouthfeel and flavors of dark fruit, baking spices and a comforting finish of vanilla and caramel.
